Buffalo Chicken Deviled Eggs

I came across this recipe on my favorite food blogger’s website, and my mouth watered instantly. You can find his recipe here. This recipe is a little different but I would imagine just as delicious. 
 
I have to admit, it felt wrong stuffing chicken into an egg, but it tasted so right!
Happy Easter!
 
 
3 boiled eggs
1 Tbsp Ranch dressing
1 Tbsp Frank’s RedHot, or buffalo wing hot sauce
¼ cup shredded chicken, roughly chopped
½ fresh jalapeno pepper, finely diced (optional)
Blue cheese crumbles 
 
Cut boiled eggs in half, lengthwise, and add yolks to a small bowl. Add Ranch and Frank’s RedHot to bowl. Using the back of a fork, mash everything together. Add chicken and jalapeno peppers and mix together. Using a spoon, add mixture back to eggs. Top with crumbled blue cheese.

Note: I used a drop of Sriracha sauce to dot each egg, purely for esthetics, since the Frank’s was too thin.

Valentine's Day Feast featuring a 3-Cheese Fondue

Our Valentine's Day feast. It was a lot of work to prepare, but fun to enjoy this hands on meal together.
 
Our menu, except I forgot to add the fondue to the main course! :-(
To start, a mixed greens salad with sliced apples, spicy candied pecans and blue cheese.



Ben's signature NY strip steaks...cooked to a medium rare perfection!
Let the cheesy fondue fun begin!
3-Cheese Fondue

About 4 servings

½ Tbsp butter
½ Tbsp flour
½ cup white wine
½ tsp Dijon mustard
3-4 oz Gruyere cheese, grated
3-4 oz sharp Cheddar cheese, grated
3-4 oz Swiss cheese, grated
½ Tbsp lemon juice
1 garlic clove

In a small sauce pan over medium heat, melt butter and whisk in flour. Stir constantly to prevent burning. Slowly whisk in wine. Add mustard. Add cheese and stir until melted. Stir in lemon juice.

Before transferring to a fondue pot, rub a raw garlic clove on the inside of the pot.

Enjoy with your favorite steamed veggies and cubed bread.

Stuffed Chicken over Creamy Mushroom and Leek Sauce


For our Christmas party last night, I made chicken breasts stuffed with sundried tomato pesto, ricotta cheese, and fresh spinach. I thought the red and green colors would complement our Christmas theme. I served the chicken sliced over a creamy mushroom and leek sauce. Delish. I served this with scalloped potatoes, but it would also be good over rice.

Serves 10

Chicken:
6-7 chicken breasts
Salt
Pepper
3-4 oz sundried tomato pesto
6 oz Ricotta cheese
1 egg
Fresh baby spinach, stems removed (about 5-6 leaves per chicken breast)
Extra Virgin Olive Oil (EVOO)

Preheat oven to 350 degrees. In a medium bowl, combine ricotta cheese and egg; set aside. Slice the thick part of each chicken breast and flip open. Pound each chicken breast to about ¼” thick. Season outside of chicken breasts with salt and pepper. Flip breast over and spread the inside with pesto, then ricotta cheese and top with 5-6 spinach leaves. Starting with the thin side, roll up as tightly as possible and tuck in the ends to form a neat roll. Secure each breast with 2 toothpicks or tie closed with cooking string.
 
In a large frying pan with a few drizzles of EVOO, heat over high until oil starts to smoke and oil ripples. Brown all sides of chicken and transfer to a large casserole dish. Bake uncovered for 15-18 minutes, or until chicken is cooked all the way through and juices run clear. Let rest before slicing.

Sauce:
1 Tbsp butter
1 large leek, cleaned and thinly sliced
3 large baby Bella mushrooms, diced
½ cup white wine
½ Tbsp cornstarch
½ Tbsp Dijon mustard
½ cup heavy whipping cream
Salt and pepper, to taste

In the same frying pan used to brown chicken, add butter, leeks and mushrooms; sauté for 3-4 minutes. Scrap up browned bits of chicken from pan. Add wine and cornstarch, bring to a boil and whisk together. Turn heat to low and let reduce for about 5 minutes. Whisk in mustard. Add cream and season with salt and pepper.

To serve, pour sauce into a shallow serving dish and top with sliced chicken.

Chorizo Stuffed Chile Relleno Casserole

Since we weren’t going to be around for Thanksgiving, I wanted to have an early celebration and throw a big brunch for my friends. I made several egg casserole/frittatas, but this one stood out as the crowd favorite. 
 
If you’re having guests in town for the holidays, I’d recommend this simple and quick dish as a part of your brunch menu.
 
 
1 chorizo sausage link (1 lb)
1 large can of whole roasted chile rellenos (about 10-12 peppers)
6 eggs
¼ cup milk
A dash of Tabasco sauce
Salt and pepper
Freshly grated pepper Jack cheese

Remove sausage from casing and into frying pan. Over med-high heat, cook sausage through. Using a spoon, carefully stuff chile peppers. Place stuffed peppers onto a greased baking pan.

In a large bowl, whisk eggs with milk, Tabasco sauce, salt and pepper. Pour over chiles into dish. Cover with shredded cheese.

Bake on 350 degrees for 30-40 minutes or until the middle is set. Let casserole rest for about 5 minutes before cutting into squares.

Top with sliced avocado and serve with salsa.

Sriracha Deviled Eggs

I made these delicious, spicy deviled eggs as an appetizer for our Easter dinner. They were spicy, tasty and a hit!


1 dozen eggs
1/3 cup mayo
2 Tbsp Sriracha hot chili sauce
½ tsp Dijon mustard
2 tsp jarred Jalapeno juice
2 Tbsp minced fresh cilantro
Sea salt & Freshly cracked pepper, to taste

To boil eggs, place eggs in a pot covered with 1 ½” of water; bring to a boil. Once water boils, cover and remove from heat for 10 minutes. Remove eggs and place in an ice bath. Peel under warm water. Slice eggs in half and scoop harden yolks into a bowl.

Mix yolks with the rest of the ingredients until smooth. Season with salt and pepper to taste. Add more Sriracha to make spicier. Add more mayo to make creamier.

Piipe mixture back into egg whites. Garnish with a dot of Sriracha sauce and cilantro.

Corned Beef with Colcannon

‘Tis the day to wear your greenest sweater with matching socks, and to wash down green food with a cold Guinness. We celebrated by cooking traditional Irish dishes, in a not so traditional way. Instead of boiling the corned beef and cabbage, we roasted and sautéed.


Corned Beef
4 lb brined corned beef

Preheat oven to 380 degrees.

Drain and remove corned beef from packaging. Rinse off with water and place fat side down in a Dutch oven or roasting pan. Add about 1” of water, or until its half way up the beef. Cover with aluminum foil and bake for about 40 minutes per pound, or until beef easily shreds off with fork.

Let rest for 10 minutes, place on cutting board and cut at a diagonal, across the grain, into ½” thick slices.

5 Tbsp milk
4 medium red skinned potatoes, cubed
1/3 head of green cabbage, shredded
2 garlic cloves, minced or pressed
½ yellow onion, sliced
Pinch of nutmeg
Sea salt
Freshly cracked black pepper
Extra Virgin Olive Oil (EVOO)

In a medium pot, bring milk to a boil and add potatoes; simmer for 15-20 minute until tender.

In a sauté pan, add a drizzle of EVOO over med-high heat. Add cabbage, garlic and onion, sauté for about 5 minutes.

Add cabbage mixture to potatoes. Stir in nutmeg, salt and pepper; mash together.

Plate a small mound of colcannon on a plate. Make a shallow hole at the top and place a slice of butter.

Plate colcannon with sliced corned beef. Serve Key Lime Pie for dessert!

Key Lime Pie

A creamy Key Lime Pie in a graham cracker crust. The perfect green dessert for St Patrick's Day!
Crust:
2 cups crumbled graham crackers
3 Tbsp brown sugar
1 tsp cinnamon
½ tsp nutmeg
1/16 tsp salt
6 Tbsp unsalted butter, melted

Filling:
1 large egg yolks, room temperature
Finely grated zest of 1 lime
1-14 oz can sweetened condensed milk
1 cup fresh lime juice

Preheat oven to 350 degrees.

In a medium mixing bowl, combine crumbs, brown sugar, cinnamon, salt and nutmeg. Stir in melted butter. Press mixture into a 9” glass pie plate. Refrigerate for 15 minutes.

In another bowl, combine egg yolks and lime rind. Beat with an electric mixer on high for 8 minutes, until pale yellow and fluffy. Gradually add condensed milk and continue to beat for another 7 minutes, until fluffy. Reduce speed to low and slowly add lime juice, beat for 2 minutes. Pour filling into chilled pie shell.

Bake for 12 minutes, until filling is set. Transfer to a wire rack and cool completely. Refrigerate 3 hours before serving.

Top with whipped cream and garnish with lime zest or a lime slice, if you’d like.

Asparagus Soup with Baked Caprese

A vegetarian Valentine’s Day dinner so tasty and filling that my hubby didn’t even notice the missing meat!

Soup:
4 cups chicken or vegetable broth
1 small potato, cubed
2 lb asparagus, cut into 1” pieces
2 garlic cloves
Salt
Freshly cracked black pepper
½ cup cream or dollop of sour cream (optional)

In a large pot, add broth and potatoes. Bring to a boil and cook for 15 minutes. Add asparagus and cook for an additional 10 minutes. In batches, add mixture and garlic to a blender, puree until smooth. I like to save a little of the cooked potatoes and asparagus to add to the soup. Add soup back to pot over low heat and simmer. Add salt and pepper to taste. Stir in cream if you desire, or add a dollop of sour cream before serving.


Baked Caprese:
A loaf of crusty bread, sliced
Marinara sauce
Fresh mozzarella, sliced
Red, ripe tomato
Fresh basil, sliced
Extra Virgin Olive Oil (EVOO)

Preheat oven to 350 degrees.

Brush EVOO on one side of bread. Toast until oiled side is crispy.

Spoon sauce over each crusty side of bread. Top with a slice of tomato and mozzarella; bake for 15 minutes. Broil for the last 2-3 minutes until cheese is brown and bubbly. Sprinkle with basil and enjoy.


NOTE: I found if you skip the toasting with oil step, the sauce and juices from tomato make the bread very soggy after baking.

Spicy Orange Chicken

For New Year’s Eve, we had two couples over to help us bring in the new year…Asian style!

Names for the placecards were written in Chinese.
Here was the menu, although I’m only sharing one recipe with you:

Appetizer: Chicken Egg Rolls
Main Dishes: Spicy Orange Chicken over Rice and Vegetable Stir-fry over Egg Noodles
Dessert: Fortune Cookies and Mango Mochi


Spicy Orange Chicken: The star of the meal.

4 boneless skinless chicken breasts, chopped into bite sized pieces
1 egg
2 tsp salt
2 tsp pepper
Vegetable oil for frying
1/2 cup cornstarch, plus
1 Tbsp cornstarch
1/2 cup flour
1 Tbsp fresh ginger, minced
2 large garlic cloves, minced
1 tsp red pepper flakes
4 green onion sprigs, sliced diagonally in one inch strips
2 Tbsp rice wine

Orange Sauce
3 Tbsp soy sauce
1 Tbsp water
2 Tbsp fresh orange juice
7 Tbsp sugar
6 Tbsp white vinegar
Zest of one orange

In a large bowl, combine egg, salt, pepper and 2 Tbsp oil; mix well. Stir in cornstarch and flour. Add chicken pieces and coat with mixture.

In a frying pan, heat 1 inch of oil over med-high heat. Add small batches of chicken at a time and fry 3 to 4 minutes or until golden crisp. Remove chicken from oil with slotted spoon and drain on a plate lined with paper towels; set aside.

In a small bowl, combine all ingredients for the sauce. Whisk together; set aside.

Discard oil from pan, wipe it clean and add 1 Tbsp of fresh oil. Add ginger and garlic; cook until fragrant. Add red peppers, green onions, rice wine and orange sauce. Bring to a boil, then turn to low. Stir in chicken to coat with sauce. To thicken sauce, stir in 1 Tbsp cornstarch and cook until sauce thickens.

Serve over white rice and garnish with fresh orange slices.

Thanksgiving Dinner

We had a very traditional Thanksgiving dinner this year: roasted turkey, gravy, stuffing, mashed potatoes, corn, salad and rolls. I even scaled it back a little, just to make things easier. Ben's parents are not fussy eaters, so I decided not to stress myself out.

No cranberry sauce, who likes that stuff anyway? I roasted the turkey in a Reynolds Oven Bag, which was the easiest way I've ever cooked it. It came out moist with crispy skin! I did try a new stuffing this year, which was hit. I also made a new pumpkin pie, which was awesome (scroll down). I think I'm hungry again....

Artichoke Parmesan Sourdough Stuffing

Artichoke Parmesan Sourdough Stuffing

1 Portabella mushroom, chopped

1 Tbsp butter
1 onion, chopped
1 cup chopped celery
2 garlic cloves, minced
2 cups chicken broth
1 loaf (1 lb.) sourdough bread, cut into 1/2-in. cubes & toasted
12 oz. marinated artichoke hearts, drained and chopped
1 cup freshly grated parmesan cheese
5 sage leaves, minced
4-5 thyme springs, minced
1 1/2 Tbsp rosemary, minced
Salt and freshly ground black pepper
1 large egg

In a frying pan over high heat, cook mushrooms, butter, onions, celery, and garlic, stirring often, until vegetables are lightly browned, about 15 minutes. Pour into a large bowl.


Pour broth into bowl and add bread, artichoke hearts, parmesan and herbs; mix well. Add salt and pepper to taste. Add beaten egg and blend with stuffing.

Preheat oven to 350° (use temperature turkey requires; see Note below). Spoon stuffing into a casserole dish. Bake covered for 30 minutes. Uncover and bake for an additional 30 minutes until the top gets brown and crispy.


My best Pumpkin Pie yet!

Pumpkin Pie
¼ cup of white sugar

¼ tsp salt
½ cup of brown sugar
½ tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground cloves
2 eggs
1 can (15 oz) can of pumpkin
1 can (12 oz) evaporated milk
1 unbaked 9” pie shell

Preheat oven to 425 degrees.

In a medium bowl combine the first 6 ingredients. Beat eggs in a large bowl. Stir in pumpkin and suger-spice mixture. Stir in evaporated milk. Pour into pie shell.

Bake in over for 15 minutes. Reduce temperature to 350 degrees and make for an additional 40-50 minutes, or until a wooden toothpick is inserted in the middle of the pie and comes out clean.

Cool on wire rack for 2 hours before serving.
