2 large red skinned potatoes,
diced
¼ cup milk
¼ cup sour cream
¼ cup grated sharp Cheddar
cheese
3 slices of crispy bacon,
chopped
2 green onion sprigs, chopped
Salt & pepper, to taste
In a large pot of boiling
water, cook potatoes until fork tender, about 6-8 minutes. Drain and return
potatoes to pot. Add milk and sour cream. Mash until smooth. Mix in cheese,
bacon and green onions. Season with salt and pepper, to taste.
