Herb Turkey Patties with Sauteed Leeks and Potatoes

Turkey patties:
1 lb ground turkey
1 tsp fresh thyme, minced
1 tsp fresh sage, minced
1 tsp fresh rosemary, minced
3 green onion sprigs, chopped
2 garlic cloves, minced
a couple dashes of crushed red pepper flakes
salt and pepper, to taste
3/4 Tbsp EVOO

Potatoes and leeks:
2 medium red skinned potatoes, sliced
salt and pepper, to taste
EVOO

For the turkey patties, combine turkey with the remaining ingredients in a large mixing bowl and blend together well. Shape the turkey mixture into 4 medium sized patties. Heat a pan over medium high heat and cook the patties for 5-7 minutes per side or until the middle is no longer pink.

Blanch the potatoes slices, by placing in salted, boiling water for 3-4 minutes. Drain and dry off a little. In a large sauté pan over medium high heat, add EVOO and swirl it around the pan. Add the potatoes and season with salt and pepper. Cook for about 5 minutes, and add the leeks. Cook an additional 5 minutes or until the leeks are soft and the potatoes are a deep golden brown.

Serve the turkey patties over the sautéed leeks and potatoes.
